Snowbird is a Canadian variety stone ground from a hard white spring wheat, this flour has a lighter appearance and less tannic flavor than flours ground from red wheat. With a high protein content of 14%, this flour is ideal for incorporating into your sourdough bread, bagels, pizza dough, rolls and enriched doughs like brioche and challah.
Bolted flour is sifted through a fine mesh screen to remove a portion of the bran, while retaining the nutritious germ and energy dense endosperm. Remaining bran particles are full of fiber and produce a light cream colored flour.
